Purple asparagus is similar in appearance and flavor to both white and green varieties of asparagus. It does contain about 20% more sugar than the other varieties, offering a slightly sweeter taste.
Purple asparagus is tender enough and can be eaten raw, however since the purple color of the asparagus is only flesh deep, if it is cooked it will dull in color. Cooked purple asparagus tastes great whether it is grilled, steamed or sauteed. Cooked purple asparagus develops flavorful notes of artichoke, barley and almonds and pairs perfectly with olive oil, lemon and sea salt.
